Manic Monday - Track(s)

Many years ago, on any given Friday night during the season, you would find our family at one place. The race track. My step father was an avid race fan and many years he raced a car himself, when he wasn't working as a spotter or various positions on the track. I remember so vividly the smell of the cars as they rounded the track. The fuel, the dirt, the roar of the engines, the rumble of the ground. It was amazing! We knew most of the drivers and many times had our pictures made with them and even got to ride around with them as they "packed the track". That was the process of riding around the track to pack the mud down after the track had been watered.

Our family usually sat down at the bottom of the stands near the fence. I have a twin brother and sister who would bring toys and sit in the dirt and play with cars. There were other small kids who would sit with them and enjoy the company while we watched the race. One night I will never forget, a car crashed into the stands. It crashed RIGHT where we were sitting. It was the scariest feeling that I have ever felt. My little brother was sitting right in front of me and I just remember seeing that car in the air and grabbing him. I ran. I ran for our lives. I remember turning around and seeing the car in the stands right were we had been sitting seconds before! It had climbed a ten foot concrete wall and crashed right through a 15 foot fence and went right into the stands. I looked around for the rest of my family and I spotted my mother, and my other two sisters and remember the looks of fear on their faces. The car did land on a man and a young child. I don't remember their fate. It's been so long ago, but I do remember the irony of the story was that the driver of the car crashed into HIS own family. He landed on his father and his daughter.

The race Track is part of my history and I am proud of it. In fact, I actually miss it!

Manic Monday - Explosive

This could have been an EXPLOSIVE situation!


I have been battling a sinus infection for over a week now. I am on my last day of a 7 day antibiotic and unfortunately I don't feel as though I am any better. I'm still having explosive headaches due to the pressure. I took the advice of some blogging friends and tried the Neti Pot. At this point, I was willing to try anything because I have not been able to get any relief. I followed the recommended dosage instructions and flushed out my nasal passages. I must say that it was a bit odd at first, but hopefully after a few flushes it will help get rid of this infection that obviously the antibiotic isn't. I will keep you posted on the results. Manic Monday - Date

Since Brien and I began dating at a very young age (16) I went on very few dates before he and I got together. I was very shy when I was younger and I had a complex about eating in front of boys. I dated a guy and he was very tight with his money. We would go to the dollar movies for our date, he would always offer dinner but I was too scared to eat in front of him.

The first time Brien took me on a date, I remember going to a place that had a salad bar. I only ate salad followed by broccoli and cauliflower with ranch dressing. He kept asking me if that was all I was going to eat. He got a steak and baked potato. I remember when he brought me home, Mom asked how the date went and I told her that it was fine. He was a really nice guy and I liked him a lot. I headed for the fridge. She asked why we didn't eat dinner. I told her that I had just eaten light and was hungry again, then I proceeded to pig out in the comforts of my own home, away from all boys!

Back then, Brien thought I was a cheap date. My how times have changed!

Manic Monday

This Week's Theme: Gravy

A favorite family breakfast at our home are biscuits and chocolate gravy. If you ask my kids (especially my daughter) what she wants for breakfast she'll answer quickly "chocolate gravy"! Here's the recipe for those of you who have never had or made chocolate gravy. It's a really quick and easy, delicious breakfast.
Chocolate Gravy
  • 1 cup sugar
  • 3 tbs cocoa
  • 2 cups of water or milk (I use 1c milk and 1c water)
  • 1/3 cup flour
  • pinch of salt
Mix dry ingredients together in bowl. Add water (or milk) to pan over medium heat. Slowly stir in dry ingredients. Cook until desired thickness stirring frequently. Serve over hot buttered biscuits.

Manic Monday - Frost

Frost Flowers


Frost flowers is the name commonly given to a condition in which thin layers of ice are extruded from long-stemmed plants in autumn or early winter. The thin layers of ice are often formed into exquisite patterns that curl into "petals" that resemble flowers.


The formation of frost flowers, also known as "ice flowers," is apparently dependent on a freezing weather condition occurring when the ground is not already frozen. The sap in the stem of the plants will expand (water expands when frozen), causing long, thin cracks to form along the length of the stem. Water is then drawn through these cracks via capillary action and freezes upon contact with the air. As more water is drawn through the cracks it pushes the thin ice layers further from the stem, causing a thin "petal" to form. In the case of woody plants and tree branches the freezing water is squeezed through the pores of the plant forming long thin strings of ice that look uncannily like hair ie: "frost beard".


The petals of frost flowers are very delicate and will break when touched. They usually melt or sublimate when exposed to sunlight and are usually visible in the early morning or in shaded areas. **You can click the images for a closer view.**

Manic Monday - Joy

Ways to bring JOY to yourself by annoying Santa!
  • Instead of milk and cookies, leave him a salad, and a note explaining that you think he could stand to lose a few pounds.
  • While he's in the house, go find his sleigh and write him a speeding ticket.
  • Leave a note by the telephone, telling Santa that Mrs. Claus called and wanted to remind him to pick up some milk and a loaf of bread on his way home.
  • Take everything out of your house as if it's just been robbed. When Santa arrives, show up dressed like a policeman and say, "Well, well. They always return to the scene of the crime."
  • Paint "hoof-prints" all over your face and clothes. While he's in the house, go out on the roof. When he comes back up, act like you've been "trampled." Threaten to sue.
  • Dress up like the Easter Bunny. Wait for Santa to come and then say, "This neighborhood ain't big enough for the both of us."
  • Leave him a note, explaining that you've gone away for the holidays. Ask if he would mind watering your plants.

Manic Monday - Relish

I'm relishing in the big three - oh today! Yup, today is my 30th birthday y'all! I got just exactly what I wanted...a digital picture frame. I also got a small digital photo viewer key ring! I'm proud of my children and I love to show 'em off. Now I can do just that. I also got a beautiful hand made card from my beautifully talented four (almost five) year old. Y'all relish in some cake, wine, and whatever else you'd like to bring to the party! :) Stay as long as you'd like, have fun and take some left overs home with you for later! There's enough virtual cake for everyone.

Manic Monday - Kit

KITT, short for "Knight Industries Two Thousand"

I know there's an extra T in there, but when I saw this week's theme this car immediately popped into my head. I LOVED this show growing up. I remember Michael Knight played by David Hasselhoff very well! When I was a kid I remember playing Knight Rider in the back yard. We'd pretend KITT would save us from any given situation, just as KITT did in the show Knight Rider!

Facts you might or might not know about KITT:

*KITT was a very witty and sarcastic form of artificial intelligence. This car could actually carry on conversations with Michael.
*KITT could drive himself when Michael was otherwise engaged, keeping in contact via a wrist communicator or "comlink" (a modified LCD AM radio watch).
* KITT's Pontiac Trans AM chasis was reinforced with "Wilton Knight's revolutionary Molecular Bonded Shell" which was resistant to most weapons.
*KITT could accelerate to speeds nearly 300 mph.
*KITT was fueled by liquid hydrogen.
*KITT had the ability to print money.
*KITT's speech is reflected in a 'voice modulator' located above the customised steering wheel.
*KITT had the the ability to generate electical charge.

Bat-eared Fox
  • Lives in the African Savannah.
  • Named after it's huge ears.
  • Their teeth are much smaller than other "dogs".
  • They have small teeth because they eat only insects.
  • Bat-eared Foxes visit termite hills, follow locust swarms or stay close to herds of zebras or antelopes in order to feed on the insects landing on their excrements.
  • They are nocturnal animals that live in small groups.
  • A couple will live in a den and raise their pups together.
  • Mated pairs are very social and monogamous. It is unknown if they are mated for life, though.

Manic Monday - Season

When Brien and I were first married, I remember one time I made some coffee one morning. I was so proud of myself because I had added my favorite 'seasoning' to said coffee. I poured myself a cup and added a bit of sugar to it. It tasted amazing to me. I poured hubby a cup as well and took it to him. He took a sip and asked what I added to it. I proudly announced that I put in two spoons of sugar, just as he likes and a touch of something that I like. He sipped on it a bit more and then proclaimed that he wasn't a fan of what I had added to his coffee. He got up to go make him a new cup and I had to break the news to him that even if he made a new cup of coffee it would still have my "special touch" in it. He asked why and I had to break the news to him that I had added cinnamon to the coffee grounds when I made the coffee. Now, I know not to add anything to my coffee until after it is brewed to keep the peace in the family.


Have you ever tried Nature's Own Seasoning? It is really good. I use it in just about everything that I cook. It's great for seasoning up hamburger meat, pastas, or anything in which you would you'd add salt and pepper. It is a great replacement for your salt and pepper.
