Summertime Goodies!

One of my family's favorite "summertime" recipes is quick and easy. We don't have room for a garden where we live now, but when we did have a garden we always had an abundance of cucumbers. Ripe, juicy summer tomatoes are my favorite, so combining the two seemed like a perfect solution. I am not a big fan of just plain cucumber. My mom used to do half and half vinegar and water with salt, pepper, and onion. If you soak it about a half a day before eating they are scrumptious. But, my kids didn't care much for this recipe.

I found a way to make the kids love them. I slice my cucumber and dice a few tomatoes. Sounds easy doesn't it? Well, it only gets easier from here. Take your favorite brand of Italian dressing and cover. I usually refrigerate for a couple of hours before serving, but it's great at room temperature as well. The longer it marinades in the dressing, the better the taste. Give it a try (if you haven't already) and let me know what you think. It works well with most meals, light or heavy.

Oh, that looks yummy. Now-a-days those two things are a shortcut to acid reflux for me. :sigh:

i make this too, your way, not the dressing, but i add a teaspoon of sugar... LOVE it!!!

Sounds yummy but I'm afraid I couldn't get Amanda to touch it with a ten foot pole. Of course, that means I could have it all for myself, right?!?

I've done this both ways Tisha. Mom used to make it the first way and I did that for a bit too, but the last way is the best. Yep, I love it and mostly if it's iced cold. Have a great day sweetie. Big hug. :)

I love cucumbers that way also. We had that a lot as kids. Now that is some good wholesome eating.

My mom fixed cukes and tomatoes like that, too! She used a bit of sugar along with the vinegar, and would add iced cubes to the serving bowl. We were just talking about this today!
My grape tomatoes are ripening and my Early Girls are getting there. There's nothing better than fresh tomatoes. Well, maybe there is...
